The culinary program at Four Seasons Hotel Miami is reaching new heights with the unveiling of Edge Brasserie and Cocktail Bar, a rooftop and indoor dining spot located above Brickell Avenue. This establishment aims to embody the spirit of Miami’s diverse food scene by offering regional cuisine that is simple yet socially presented for a contemporary culinary experience. The Cocktail Bar also showcases a seasonal approach that respects timeless recipes while adding originality to the mix.

Edge Brasserie and Cocktail Bar, which used to be known as Edge Steak & Bar, has undergone a transformation that enables its chefs to explore their creativity in conceptualizing and composing dishes. 

Executive Chef Aaron Brooks has put together an innovative menu that fuses seasonal elements, inspired by his Australian roots and artful craft. While the menu still includes farm-fresh Butchers Cuts, there are now more seafood and vegetarian options that utilize ingredients sourced from local farms, butchers, and fisheries.

Among the new Raw Bar features and Starters on offer are Dressed Oysters Prepared Two Ways, Tuna Crudo with Nikkei Sauce, Avocado, and Crispy Quinoa, and Hokkaido Scallop Risotto with Spring Peas, Pickled Pepper, and Salsa Verde. Signatures like Grilled Rohan Duck with Maduro Glaze, Caribbean Curry, Spring Onions, and Coconut Rice, Charred Cauliflower with Red Adobo, Farro, Pomegranate, and Shallot Vinaigrette, and a Whole Roasted Branzino presented tableside with Tomato and Garlic Escabeche also showcase a global sensibility. Guests will be treated to an immersive culinary journey that highlights Miami’s diverse food culture at Edge Brasserie and Cocktail Bar.

Guests visiting Edge Brasserie and Cocktail Bar can indulge in the bar’s extensive cocktail menu that features three types of drinks: Signature Seasonal Cocktails, Classic Cocktail Twists, and Tea-Based Cocktails with lower ABV offerings. Some of the bar’s standout cocktails include the One Time at Summer Camp made with Amaras Mezcal, Reposado Tequila, Cointreau, Watermelon, Lime, Agave, and Worm Salt Rim; the 007.5 with Citrus-infused Tito’s Vodka, No.3 Gin, Lillet Blanc, Italicus, and Orange Bitters; and Twas Nice, which contains Lillet, Fino Sherry, Earl Grey Lavender Syrup, and Lemon.
