KUSHIBA~ (Kushi Bar) is getting ready to open its doors on April 3, 2024, in the heart of Echo Park. The place is going to be a lively izakaya run by Chef David Schlosser, known for his work at Shibumi. Chef Schlosser has had a long journey in the culinary world, having trained in France, Thailand, Japan, and NYC. He’s bringing traditional Japanese techniques and carefully sourced ingredients to KUSHIBA~.
The restaurant will focus on kushikatsu, a popular dish in Osaka, Japan. Each skewer will be carefully prepared with various meats, seafood, and veggies coated in crispy panko and fried just right. There will be around 20 types of kushikatsu to choose from, along with seasonal specials.
KUSHIBA~ aims to take guests back in time to the lively streets of Osaka during the early Showa Era (1920-30s). The decor will reflect that period, with authentic furnishings and regional decor creating a nostalgic atmosphere. Unlike Shibumi, KUSHIBA~ will offer a more casual dining experience without compromising on quality.
You can enjoy a range of drinks at KUSHIBA~, including highball cocktails, Japanese beers, whisky, sake, and shochu. And of course, don’t miss out on Chef Schlosser’s signature dishes like wagyu corned beef and chili-spiced chilled tofu.
