In London at Ten Trinity Square, Chef Anne-Sophie Pic and Chef de Cuisine Evens Lopez have unveiled a captivating summer menu at La Dame de Pic London, located within the Four Seasons Hotel. Their aim is to showcase the finest seasonal ingredients sourced locally from the United Kingdom.
The menu offers a delightful culinary exploration of Great Britain, featuring an array of local dishes. Guests can savor the likes of line-caught seabream from Cornwall, lobster from Dingwall, and organic salt marsh lamb from Denbighshire. Showcasing the bounty of the British summer harvest, the menu prominently includes heirloom tomatoes, aubergine, and other carefully selected ingredients sourced from nearby. These dishes are thoughtfully accompanied by locally-sourced elements such as orach, kombu, and foraged fig leaves.
Chef Evens Lopez expresses his enthusiasm for the menu, stating, “British produce is truly exceptional, and both Chef Anne-Sophie and I are passionate about highlighting the importance of locality and seasonality here at La Dame de Pic London. We take pride in collaborating with renowned partners and suppliers throughout the country, ensuring our guests enjoy a culinary experience with a clear journey from the sea, farm, or earth to their plate.”
One of Chef Anne-Sophie’s signature dishes, Les Berlingots, also receives a seasonal twist on the menu. This savory ravioli-style pasta, named after the traditional French sweet that Anne-Sophie cherished in her childhood, features Baron Bigod, a luscious brie-style cheese from Suffolk, combined with seasonal British petit pois. The dish is presented in the distinctive Berlingots shape, adding a touch of whimsy to the culinary experience.
Complementing the menu are two beverage pairings that showcase the versatility of often-overlooked drinks. Guests can indulge in Manzanilla dry Sherry, which holds historic connections to Britain and was favored by Henry I in the 12th century, as well as oolong tea.
