The restaurant, Jaleo by José Andrés, has officially opened its doors to welcome its first guests at Atlantis The Royal. The renowned chef and entrepreneur imagined the restaurant to showcase the rich regional diversity of Spanish cuisine in a festive, stylish, and casual atmosphere, translating to lively in Spanish. Situated on the ground floor of the ultra-luxury entertainment resort, Jaleo offers guests a varied tapeo-like experience, with a tapas bar, Foosball game, small private bays, and an expansive outdoor terrace beneath 100-year-old olive trees.
The restaurant’s plates are meant to be shared, featuring the best authentically Spanish and local ingredients, simply prepared, and designed to be enjoyed with good friends and conversation. Guests can expect to try the award-winning assortment of signature tapas, traditional small plates of Spain, savory paellas, Spanish cheeses, and wines. Jaleo’s signature dish is Chef’s tasting menu, ‘José’s Way’, featuring a collection of José’s favorite dishes paired with delectable Spanish wines.
The heart of Jaleo restaurant lies in its live cooking stations, where guests can watch the preparation of the most well-known traditional Spanish dish, “Paella.” Cooked over a wood-burning fire, the chef rings a cowbell and shouts “PAELLA” when the dish is ready, which signals everyone to gather around. The live cooking area also features a grill section where traditional Spanish meats and Mediterranean fish are cut and prepared in an authentic Spanish style.
The menu at Jaleo is inspired by the recipes passed down from José Andrés’ mother and the dishes he created with his father when celebrating with friends and family. One of Jaleo’s signature dishes is the Paella Valenciana, featuring chicken, rabbit, green beans, and seasonal artichokes, prepared tableside for four to eight guests. Another must-try dish is the Croquetas de Pollo, a flavorsome dish cooked for two days and filled with shredded chicken and creamy béchamel. Seafood lovers can savor Gambas como en Zahara, Jaleo’s most famous tapas with shrimp sautéed with garlic, lemon juice, and liquor added for depth and a unique character.
Jaleo is open every day from 6 pm until 1 am.
