Fairmont Grand Del Mar has recently revealed its newly reimagined lobby lounge, library, and bar. Collaborating with the Los Angeles-based design firm Bishop Pass, the luxury resort’s extensive renovation reflects the grandeur of Italian palazzos while fostering an intimate atmosphere for gatherings.
The redesigned areas are adorned with a color scheme dominated by gold, with green and deep burgundy accents, using textured textiles and leather. The spaces now feature neo-baroque and rococo-inspired furnishings, including Venetian glass chandeliers in the main lobby, creating an inviting setting for smaller gatherings.
The lobby lounge serves as a central hub for guests, offering light bites, specialty cocktails, high tea service, and live entertainment. The lobby bar now includes a custom mural inspired by the Los Peñasquitos Canyon Preserve, along with a banquette table and versatile dining tables to encourage social interaction. The new bar menu boasts tapas-style dishes, craft cocktails, exclusive spirits, and a distinctive wine selection.
In partnership with Warwick Bookstore, the library now offers a curated selection of books for guests to enjoy during their stay. Additional enhancements include a large screen television and a private liquor program featuring premium whiskies, bourbons, and cognacs.
Coinciding with the lobby lounge updates, Amaya at Fairmont Grand Del Mar is introducing a French brasserie-inspired dining experience. Executive Chef Bryn McArthur and Chef Roman Garcia lead the culinary team, bringing extensive experience and accolades. Chef McArthur formerly served as Chef de Cuisine at The Savoy in London, and Chef Garcia joins from Selby’s in Atherton, California, where he helped earn a Michelin star.
The new menu at Amaya offers a modern take on classic French cuisine, utilizing southern California’s freshest local ingredients. Dishes include French bistro staples like Frisée Aux Lardons, Croque Monsieur, Steak Frites, and Escargot Vol-au-vent, alongside contemporary dishes such as Pâté Maison, Scallop Crudo, honey-lacquered Duck Crown, Bouillabaisse, and wild mushroom Parisienne Gnocchi.
Amaya’s new design echoes the French architectural influences of the Fairmont Grand Del Mar and the vibrant spirit of San Diego. Guests can enjoy their meals on Amaya’s shaded terrace surrounded by fragrant blooms or in the lively indoor dining room with classic brasserie-red decor. Amaya offers a rich dining experience that celebrates both flavor and heritage, providing a place for community and culinary tradition.
