Ette, a luxury hotel just minutes from Walt Disney World® Resort, is excited to introduce new dinner menu items at Salt & The Cellar, created by Michelin-starred Chef Akira Back. These new dishes are designed to enhance the dining experience with bold and unique flavors.
At Salt & The Cellar, guests can enjoy a combination of Akira Back’s creative cuisine, a wide selection of spirits, and exceptional service. The menu blends Mediterranean and Asian influences, resulting in innovative dishes made with the freshest ingredients and presented with artistic flair.
To start the meal, the tuna fusion appetizer combines avocado, mango, dragon fruit, kiwi, radish, and a mango chili sauce for a refreshing and flavorful bite. New main courses include glazed duck and seared Chilean sea bass. The pan-roasted duck breast is served with smooth potato purée, truffle-seasoned rainbow carrots, citrus-infused endives, crispy potato crumble, and a rich balsamic soy reduction. The seared Chilean sea bass is paired with matcha soba noodles, a creamy squid ink sauce, and parmesan-roasted asparagus, offering a perfect mix of flavors and textures.
Salt & The Cellar is also introducing a carefully curated sushi menu. Guests can choose from high-quality tuna, salmon, wagyu beef, freshwater eel, and Japanese yellowtail, available as nigiri (a slice of fish over rice) or sashimi (thinly sliced raw fish). In addition to customizable options, five specialty rolls have been created to offer unique flavor combinations. The Pop Rockin roll includes asparagus, cucumber, spicy crab, and a playful pop rock topping, while the Hot Mess roll features fresh sashimi poke, seasoned seaweed salad, and a spicy ponzu aioli sauce.
