Capolinea, the Italian-American fine dining restaurant situated within Signia by Hilton Atlanta, has announced its grand opening. Helmed by Executive Sous Chef Jeuel Ortiz, Executive Pastry Chef Daniella Lea Rada, Director of Beverage Evan Sewell, and Sommelier Marvella Castañeda, this establishment offers a menu featuring handmade pastas, traditional Neapolitan pizzas, and luscious desserts, all crafted using locally-sourced ingredients from nearby suppliers.
Chef Jeuel’s menu draws inspiration from Italian flavors, utilizing a variety of high-quality ingredients sourced from Georgia. Before its opening, Chef Jeuel extensively researched by visiting farms across the state and exploring cities in Northern Italy like Bologna, Florence, and San Marino. This thorough exploration has positioned Capolinea as one of the city’s most anticipated restaurant openings. Guests are welcomed with a signature bread service comprising house-made brioche, Castelvetrano Olive sourdough, and an assortment of Italian-inspired butters. The menu offers a range of options including charcuterie, salads, and antipasti such as Halibut Crudo and Beef Carpaccio. Main dishes include classics like Ravioli D’Anatra and Limone Ricotta Gnudi, alongside Neapolitan pizzas and heartier selections like Whole Branzino. Throughout the menu, local and regional ingredients take center stage, with highlights like Ellijay mushrooms in the Fritto di Funghi and sweet Georgia honey paired with the Salumi e Formaggi.
For a sweet ending, Executive Pastry Chef Daniella Lea Rada and her team have crafted beautifully plated desserts paying homage to Italy. These include modern versions of the traditional Cannoli, featuring Fior di Latte whipped ganache, Adona cauliflower, Clementine gel, and bergamot sorbet, and Prendiamo un caffè?, made with Mascarpone whipped ganache, espresso mousse, dulcetto al amaretto, and 80% gelato al cioccolato. Additionally, no Capolinea meal would be complete without one of these confectionary creations, elevated pastry classics, or seasonal, house-made gelatos.
In complement to the menu, Director of Beverage Evan Sewell and Sommelier Marvella Castañeda have curated an unforgettable beverage experience for locals and guests alike. Capolinea’s wine program boasts approximately 2,000 bottles with a curated selection predominantly from Italy, celebrating the rich tapestry of flavors and stories woven by small artisanal winemakers and large-estate benchmark producers. The wine list has been meticulously designed to harmonize with the flavors of Italian cuisine, from the robust reds of Tuscany, perfect for pairing with hearty pasta dishes, to the crisp whites of the Friuli, ideal for sipping alongside seafood. Additionally, Capolinea’s collection includes wines from the lush vineyards of France to the sun-kissed valleys of California and beyond.
The true centerpiece is Capolinea’s tableside martini service, featuring a sleek trolley with a selection of the coldest martinis in Atlanta. Using liquid nitrogen to chill and garnish the glass to -350 degrees ensures a frosty cocktail every time for this interactive and personal cocktail experience. Highlights include the Gabagool martini, featuring capicola and spicy salami-infused Ketel One Vodka, Fino sherry, and vermouth, garnished with a sundried tomato and ricotta-stuffed olive, as well as the Capolinea martini, featuring olive-oil washed vodka. In addition to martinis, diners can also enjoy a selection of aperitivi, including the Creamsicle topped with burrata foam or an array of signature cocktails and spirit-free selections.
Situated on the hotel’s fourth floor, guests stepping into Capolinea are greeted by an atmosphere of elegance and intimacy. The dining room features striking crown molding and captivating light fixtures, offering breathtaking views of Atlanta’s skyline. Throughout the restaurant’s naturally illuminated space, guests discover cozy areas adorned with chic banquettes and booths, perfect for any occasion, whether it’s a romantic evening, a joyful celebration, a family milestone, or a professional gathering. Capolinea proudly showcases various pieces of local and regional artwork, contributing to the extensive art collection curated by Atlanta-based Faulkner+Locke at Signia by Hilton Atlanta.
For those seeking privacy, the hotel offers a private dining room accommodating up to 18 guests. Alternatively, patrons can relish in seasonal al fresco dining overlooking Mercedes-Benz Stadium on the expansive wraparound terrace or opt for a seat at the impressive bar.
Capolinea is just one of eight culinary experiences at Signia by Hilton Atlanta, all celebrating the South and Atlanta regions, from Nest on Four to Club Signia. As part of the Georgia World Congress Center Authority, the 976-room property provides direct access to the Georgia World Congress Center via a pedestrian walkway and sits conveniently near Mercedes-Benz Stadium and State Farm Arena, appealing to sports and entertainment aficionados. Alongside its culinary offerings, the hotel boasts additional amenities such as a spa, beauty bar, fitness center with yoga stations, Peloton bikes, and more.
