French Michelin-starred chef Irwin Durand, known for his creativity, innovation, and bold ideas in fine dining, is set to open his first restaurant, IRWIN, in mid-April. This new venture will carry his name and reflect his unique approach to French cuisine.

Durand has developed his skills in the kitchens of some of France’s most famous chefs and earned Michelin stars at renowned establishments like Alan Geaam and Le Chiberta. Now, he is starting a new chapter with IRWIN, a restaurant designed to showcase his personal vision of French gastronomy. “This project is my way of sharing a style of cuisine that plays with flavors, textures, and memories. Each dish celebrates the richness of the land around us,” Durand explains.

Located at 22 Rue de Cambacérès in Paris’s stylish 8th arrondissement, IRWIN blends modern design with personal touches inspired by Durand’s journey as a chef. The restaurant is also a tribute to his great-grandmother, Irma Durand, who he describes as “a force of nature” and a key source of inspiration. “She taught me perseverance, and through this project, I celebrate her passion and strength,” says Durand.

A Mix of Tradition and Innovation

At IRWIN, Chef Durand and Executive Chef Camille Larquemin invite diners on a culinary journey that balances nostalgia with modern techniques. The menu changes with the seasons, featuring fresh, locally sourced ingredients. Durand’s approach aims to take guests back to the flavors of childhood while adding the precision and creativity of a Michelin-starred chef. “I want each dish to surprise and delight, creating small moments of wonder while staying true to the simplicity of those first tastes,” he explains.

More Than Just a Meal

IRWIN offers two unique dining experiences. The main dining room, an elegant space with seating for 22 guests, is designed to put the spotlight on the food. For an even more exclusive experience, a chef’s table seats 8 to 10 guests and provides a close-up view of the open kitchen, where diners can watch the chefs at work.

The interiors, created by JOD Architecture, balance light and shadow to create a calm and intimate atmosphere. High-quality materials, including custom marble work by Wilfried Rouissi, add to the refined yet welcoming feel of the restaurant.

At just 35 years old, Irwin Durand is already recognized as one of the most talented chefs of his generation, admired for his technical skill, creativity, and pursuit of excellence. IRWIN is set to open in mid-April, offering an exciting new destination for fine dining in Paris.
