This unique dining experience will feature signature dishes like the “Caneton Frédéric Delair,” honoring Charlie Chaplin, who honeymooned at the Metropole Hanoi in 1936. Guests will also witness culinary techniques such as the cutting of duck and the flambéing of Mademoiselle crepes, bringing a slice of French gastronomic tradition to Hanoi.
Le Beaulieu, established in 1901 and the oldest continually operating restaurant in Vietnam, is celebrated for its modern French cuisine that blends classical flavors with seasonal, high-quality ingredients sourced from France, Vietnam, and beyond. Recently listed in the MICHELIN Guide 2024, the restaurant is known for its stylish presentation and well-balanced portions.
Chef de Cuisine Charles Degrendele, originally from Marseille, France, has an impressive culinary background, including experience in Michelin-starred kitchens and training at La Tour d’Argent. Le Beaulieu’s extensive wine collection features over 600 references and 1,600 bottles, including more than 100 Grand Cru Classés and wines from leading wineries worldwide.
The restaurant and its elegant outdoor extension, La Terrasse, underwent a seven-month refurbishment in 2021-22, resulting in a sophisticated new interior that merges the hotel’s rich history with a contemporary design.
In May, Le Beaulieu introduced “Rendez-vous,” a quarterly dining series that brings together Metropole’s award-winning culinary team with renowned chefs from around the globe. The series debuted with exclusive dinners by French Chef Arnaud Sauthier, who holds a Michelin star for Maison Dunand in Bangkok.
The hotel’s historic Heritage Wing, featuring 103 guest rooms and suites, reopened in December 2023 after a meticulous 21-month restoration. This original wing, established in 1901, has welcomed numerous heads of state, royalty, and world-famous personalities over the years.
