Balinese Culinary Journey at TRACE Restaurant & Bar, Element Kuala Lumpur

In July and August, TRACE Restaurant & Bar at Element Kuala Lumpur presents a culinary journey that blends the vibrant flavors of Balinese cuisine with the modern sophistication of city dining. This Balinese-infused buffet marks a unique collaboration between Element Kuala Lumpur and Element Bali Ubud, the only two hotels carrying the “Element by Westin” brand under Marriott International in Southeast Asia.

Drawing inspiration from the serene landscapes and rich culinary traditions of Bali, the buffet offers an array of dishes crafted to transport diners to the heart of the Indonesian island. Chef Taib Ridhwan, Executive Chef of Element Kuala Lumpur, has welcomed Chef Dewa and Chef Edi, Executive Chef and Demi Chef from Element Bali Ubud. Together with his team, they prepare a menu harmonizing authentic Balinese flavors with local Malaysian cuisines, providing a feast from appetizers to desserts.

Guests of this limited-time dinner buffet can start their journey with iconic Balinese starters such as Serombotan, a traditional assortment of steamed vegetables with coconut spice. Seafood options include Tuna Sambel Matah, featuring grilled tuna with shallot salsa, and Lawar Nangka, a savory and spicy salad made with young jackfruit and Balinese herbs.

The Live Grill station features Balinese grilled meats, including Ayam Bumbu Gede (grilled BBQ chicken), Fish Satay Lilit, and Udang Sune Cekuh (grilled tiger prawns with Balinese spices).

The Carving Station offers roasted and baked delights such as Ayam Betutu (Balinese roasted chicken stuffed with cassava leaves), Ikan Metambus (baked whole fish), and Malaysian-Style Roasted Lamb Leg, accompanied by a variety of sauces and condiments.

Additional Balinese dishes include Ayam Pelalah (shredded chicken with chili paste and lemongrass), Sapi Kuah Base Gede (roasted beef with Balinese gravy), and Grage Palem (fish and shrimp paste rolls).

Balinese-infused desserts include Jaja Lukis, Kue Lapis, Lempog Casava Cake, and Kue Wingko.

Chef Dewa has personally ensured that Element Kuala Lumpur’s culinary team is trained to present the spread using his authentic recipes. The Balinese Dinner Buffet is offered every Friday and Saturday until 31 August 2024, priced at RM178 nett per adult and RM89 nett per child. Marriott Bonvoy and Club Marriott members receive discounts of 20% and 35%, respectively. Maybank and Standard Chartered cardholders also receive varying discounts.
