Journeying along the Mekong trail, renowned for its abundance of tropical delights, the Four Seasons Resort Chiang Mai unveils a culinary fusion of Thai and Vietnamese traditions with its exclusive “Four Hands” menu at Khao by Four Seasons. “Both Thailand and Vietnam boast distinct and tantalizing cuisines, renowned for their emphasis on fresh ingredients, intricate flavors, and vibrant colors,” shares Sous Chef Naruchit Taingtrong, who leads the culinary team at the Michelin Guide-recommended restaurant in Chiang Mai. “This collaboration not only promises guests a remarkable culinary experience but also facilitates an exchange of culinary expertise among our chefs, resulting in dishes that beautifully showcase the similarities and nuances of Thai and Vietnamese cooking,” adds Nguyễn Yên, Sous Chef at Four Seasons Resort The Nam Hai, Hoi An, Vietnam.

The “Culinary Mastery: A Thai Vietnamese Fusion” event beckons diners to savor a four-hand dinner experience, showcasing signature comfort dishes from both culinary traditions. Here, the quintessential sweet, sour, salty, and spicy flavors that define Thai and Vietnamese cuisine intertwine harmoniously.  Alongside inventive twists on classic favorites, the chefs will present their own creative concoctions, seamlessly marrying ingredients and techniques from both cultures. “Food is a compelling medium for storytelling,” reflects Yên. “Through this menu, guests can embark on a journey through history, ingredients, and culinary techniques, gaining deeper insights into the rich cultural and culinary heritage of both countries,” adds Taingtrong. At this celebrated dining event, patrons can savor delights such as grilled beef with five-spice sauce, fresh prawn summer rolls, char-grilled eggplant with spring onion and soy sauce, and longan and lotus sweet soup. “Each dish narrates a unique aspect of the region’s heritage, inviting diners to immerse themselves in the flavors and narratives of the destinations,” concludes Yên.

Culinary Contrast: Thai Versus Vietnamese Flavors.

Here, the distinct essence of Thai cuisine, renowned for its bold and aromatic profiles, stands in stark contrast to the subtle interplay of sweet, sour, salty, and spicy notes that define its character. “My palette is enriched by an assortment of fresh herbs and spices like lemongrass, galangal, makrut lime leaves, and Thai basil, essential in crafting intricate and vibrant dishes,” shares Taingtrong. “Key ingredients such as coconut milk, fish sauce, and shrimp paste infuse Thai cuisine with layers of depth and richness,” he elaborates. Conversely, Vietnamese culinary tradition embraces a lighter, fresher approach, celebrating the innate flavors of its ingredients. “Our cuisine thrives on a bounty of fresh herbs, vegetables, and fruits, crafting dishes that marry nutrition with flavor, akin to our Thai counterparts. Yet, our pantry staples include rice noodles, fish sauce, lime, and an array of herbs like cilantro, mint, and Vietnamese basil,” explains Yen. While steaming remains a shared technique, Thai cuisine boasts its prowess in stir-frying and grilling, while Vietnamese dishes often find their zenith through boiling or braising, showcasing purity and simplicity. “Together, our collaboration aspires to transcend boundaries, weaving a culinary tapestry that speaks to the very essence of the soul,” resonate the chefs in unison.

Nestled amidst the picturesque paddy fields, the dining experience at the resort offers an immersive journey accentuated by the natural beauty of the surroundings. Here, a series of special events, themed dinners, and culinary demonstrations curated by the resort unfold, each serving as a vibrant celebration of Thai and Vietnamese culture. “A truly memorable dining experience extends beyond the menu; it’s a homage to culture and tradition,” remarks Anthony Tschudin, the Resort Manager of Chiang Mai. Within this culinary tableau, guests are invited to engage in live interactions with the chefs, particularly during captivating cooking demonstrations.

Reflecting on the culinary tapestry of Asia, Anthony Tschudin highlights the seamless connections fostered across the Four Seasons Resorts of Asia. “Culinary culture serves as a unifying thread across our diverse destinations,” he notes. “From the vibrant street food scenes to refined gourmet dining, our chefs collaborate to honor the rich culinary tapestry of Asia, embracing both its diversity and shared heritage.” Through the integration of chefs from various resorts, Four Seasons exemplifies its commitment to fostering a dynamic gastronomic tradition spanning from Thailand to Vietnam, promising every guest an enriching journey through a kaleidoscope of flavors.

Within the realm of culinary artistry, Naruchit Taingtrong’s journey begins in the heart of his family’s kitchen, where he delved deep into the intricate realm of flavors and ingredients. “My journey as a chef is more than just a profession; it’s a profound calling to showcase the diversity and richness of Thai cuisine,” he reveals. “With every dish I create, I aim to not only tantalize palates but also to impart the warmth and essence of Thai culture.”
