Raffles Hotel Le Royal, recognized as one of Southeast Asia’s most iconic luxury hotels, is set to host guest Chef Martin Simolka for an exclusive dining experience throughout March, further enhancing the fine dining scene in Cambodia.
Chef Martin currently holds the position of Executive Chef at the prestigious 5-star Sofitel Le Scribe in Paris Opéra, where he oversees the acclaimed restaurant Rivage. With a background entrenched in Parisian culinary excellence, he has refined his skills in renowned kitchens such as Restaurant Pavillon Ledoyen (3 Michelin stars), Restaurant l’Abeille (2 Michelin stars) at Shangri-La Hotel, Paris, Molitor Paris, The Peninsula Paris, and Four Seasons Hotel George V, Paris, among others.
His culinary philosophy revolves around showcasing the freshest local produce and top-quality ingredients, emphasizing seasonality, and incorporating seeds, grains, infused oils, and spices. “Cooking is about sharing, pleasure, and discipline, both with customers and my team in the restaurant,” remarks Chef Martin.
At Restaurant Le Royal, the signature fine-dining venue at Raffles Hotel Le Royal, Chef Martin will present two opulent dining options daily: a dinner set priced at $88++ served from 18:30 to 22:30 and a lunch set priced at $38++ served from 12:00 to 15:00. Each meal will offer optional wine pairings alongside a special Louis XIII tasting.
Chef Martin’s culinary creations will be available on March 20, 21, and 22, with advance reservations strongly recommended.
Chef Martin’s appearance marks the latest installment in Raffles Hotel Le Royal’s prestigious culinary series. Previously, the hotel featured exclusive set dinners and lunches by French Chef Pascal Favre d’Anne, recipient of 1 Michelin star, in November. In March, the hotel welcomed French Chef Patrice Hardy from the 2-Michelin-starred Le Palme d’Or at Hotel Martinez in Cannes and the 1-Michelin-starred La Brettonnière in Boulogne-Billancourt. Furthermore, in June, a collaboration between 2-Michelin-star Chef Thierry Drapeau and Vietnam Iron Chef winner Chef Sakal Phoeung offered a series of “four-hands” dining experiences.
