JARS Dessert Concept, founded by the renowned Celebrity Chef, best-selling cookbook author, and TV Host Fabio Viviani, is set to open its doors in Laguna Niguel on November 10th. This delectable establishment is already celebrated for its signature sweets like Red Velvet Cheesecake, Salted Caramel Pecan Pie, Tiramisu, and Double Dark Chocolate Cake, which have gained a devoted following at JARS’ flagship location in Chicago, launched earlier this year.
Fabio Viviani, who made his mark on the culinary world after moving from Italy to the United States in 2005, rose to prominence as a fan favorite on the reality television competition series Top Chef in 2008. Since then, Fabio has embarked on a prolific journey, opening over three dozen food establishments, including restaurants, bars, and event spaces, while also representing various international brands as a spokesperson. With a staggering annual count of over 10 million meals served, Fabio Viviani Hospitality stands as one of the leading restaurant groups in the US.
In 2017, Fabio introduced his casino brands, starting with Portico by Fabio Viviani at New York’s del Lago Resort & Casino. This venture was soon followed by a successful partnership with Penn National Gaming, resulting in The Eatery by Fabio Viviani—a thriving modern food and beer hall situated in four Hollywood Casino properties in the Northeast. This food haven offers a diverse array of cuisines, including Mercato, The Classic, Zen Noodle, and Joe & Dough.
Best known for his appearances on Bravo’s Top Chef in seasons 5 and 8, where he earned the title of “Fan Favorite,” Fabio Viviani’s on-screen charisma and off-screen accomplishments have established him as one of the most influential figures in the culinary and hospitality industries nationwide. His television guest appearances have been a recurring presence on shows like Good Morning America, The Rachael Ray Show, and various Food Network programs, including his victory in Cutthroat Kitchen: All-Star Tournament.
When asked about the inspiration behind the new dessert concept, Fabio shared, “During the COVID shutdown, my wife and I were at home, looking for ways to have some fun since we couldn’t go out. We started ordering takeout and desserts, but soon we grew bored of the same old cookies and cupcakes. So, we decided to create our own concept. We now offer over 150 rotating flavors, featuring beloved cakes, pies, and treats from around the world—all crafted with high-quality ingredients, including custards, cookies, candies, and other indulgent delights. We’ve built an entire concept around this, and every jar is made fresh daily, tailored to order.”
As for the innovative soft serve desserts at JARS, Fabio’s passion for soft serve led to the development of unique and exciting flavors. He explained, “I’ve always loved soft serve, but I found it a bit monotonous with just vanilla or chocolate. So, we decided to take it to the next level by layering exciting flavors like red velvet, fruity pebbles, and Oreo cookies into our soft serve offerings.”
