The limited-time pop-up collaboration between Beverly Wilshire, A Four Seasons Hotel, and the renowned Scratch Restaurants group was officially announced. Spearheaded by the husband-and-wife chef team Phillip Frankland Lee and Margarita Kallas-Lee, this immersive dining concept will take place from August 4 to October 4, 2023.

Located on the eighth floor of the luxurious hotel is the one-of-a-kind Royal Suite, boasting stunning views of Beverly Hills and an elegant, modern design that embodies the essence of Hollywood dreams. Accessible only by a private key-accessed elevator, the pop-up will feature an intimate, dimly lit dining room accommodating only 12 guests, who will have the unique opportunity to sit face-to-face with three talented sushi chefs at a special sushi counter.

The experience will kick off with a welcome cocktail, setting the stage for an extraordinary 17-course nigiri tasting menu. The menu is carefully curated, highlighting fish and shellfish primarily sourced from Tokyo’s renowned Toyosu Fish Market, with ingredients flown in twice a week. Inspired by the Lees’ own omakase experiences, the menu will showcase a mix of innovative creations and Chef Lee’s signature dishes.

Among the exquisite offerings are Hamachi painted yellow with sweet corn pudding, topped with a fine sprinkle of breadcrumbs crafted from Kallas-Lee’s famous sourdough. There’s also aged Blue Fin Tuna served simply with Lee’s homemade soy sauce and fresh wasabi, and Albacore wrapped in sake-soaked nori, topped with ponzu, fresh wasabi, and crispy onions. An exceptional highlight is Chef Lee’s signature 1-2 punch of Roasted Bone Marrow nigiri seasoned with soy sauce, sea salt, and freshly grated wasabi root, followed by the fan-favorite Unagi, fried crispy in rendered bone marrow fat and dressed with poblano yuzu kosho, soy sauce, ponzu, lemon, and sea salt. For a delightful conclusion, guests will savor Chef Margarita’s Matcha Bon Bon, creatively paired with makrut lime, white chocolate, and shortbread, accompanied by a Hot Green Tea brewed with umeshu plum wine, smoked lavender honey, and fresh yuzu.

To complement the exquisite sushi experience, the beverage program is thoughtfully curated by Sake Sommelier and Director of Operations Gavin Humes. The program includes a selection of Japanese sake and whisky, with three different beverage pairing options offered as add-ons, ranging from USD 105 to USD 125. Guests can enjoy three sakes, two micro cocktails, and a beer in the first option, or opt for six pours of sake in the second option. The third option includes six pours of Japanese whisky. Additionally, beverages are available a la carte for those who prefer to customize their experience.
