February 10 and 11, 2023 heralds the return of the popular “Friends of Pelagos” series, with Chef Luca Piscazzi reuniting with French maestro Maxime Gilbert of ÉCRITURE Hong Kong for a delectable showcase that alternates between the two former colleagues.
For just two nights only, the dazzling Piscazzi-Gilbert menu showcases the artistry of these two leading lights. Chef Piscazzi kicks off proceedings with Amberjack Ceviche – salsify tagliolini and “cacio e pepe” – hotly followed by Chef Gilbert’s Caviar and Uni Tart featuring Royal Caviar Club Schrenckii and sea urchin.
The dance continues with Chef Piscazzi’s Dover Sole Meuniere with saffron, black olive and liquorice, artfully echoed by Chef Gilbert’s John Dory with Kakinoki Take, ikura, chorizo, and sauce vin jaune. Priced at EUR 145 per person for an eight-course set menu, it’s a homage to creative friendship not to be missed.
Showcasing the cuisine of his Italian childhood and French heritage skills honed during an illustrious international career, Chef Piscazzi’s Winter Menus pair traditional techniques with surprising ingredients for a creative culinary adventure. Two seven course selections – 180° Land and 180° Sea – take classic winter favourites such as bourguignon and foie gras to innovative heights, while a nine-course 360° Chef’s Menu unites the best of both for the ultimate winter surf and turf discovery.
