Ramen Ichitatsu is located a 3-minute walk from Kameari Station in Tokyo. The shop reopened on October 19, 2022, offering homemade ramen made with flour from Hokkaido.
Here you can choose from two types of noodles: “hand-rolled flat noodles” and “medium-thin noodles”. The hand-rolled thick noodles have a high water content and are characterized by their smooth and chewy texture. The straight, medium-thin noodles can generally retain an amount of water. Both are excellent compatibility with the deep-flavor soup.
The classic soy sauce ramen is a soup based on Nagoya cochin and four types of soy sauce. Nagoya Cochin is a special breed of chicken that has been bred since the Meiji Period some 160 years ago. The exquisitely balanced soup is carefully made so that it goes well with the noodles.
In addition, the char siu has been hand-made over a long period of time and the flavored egg has been thoroughly marinated. The green onion is from Kujo green onion which came from Kyoto Prefecture. Everything is homemade here including the wontons and chili oil.
