In celebration of springtime, the culinary team at The Peninsula Hong Kong is presenting a collection of new menus that highlight the flavours of the season.
“Taste of Umami” Celebrates Deliciousness
From 1 to 30 April 2022, diners will have the opportunity to experience the “Taste of Umami,” a special menu designed by Chef Ho to highlight its namesake flavour profile. Less well-known than other tastes – sweet, salty, sour, and bitter – umami is a Japanese word meaning “the essence of deliciousness.” In homage to the term’s origins, Chef Ho’s menu spotlights the ingredients and cookery of Japan.
Dishes that create a perfect balance of fresh piquancy and creamy richness – like an appetiser of marinated hamachi with heirloom radish, sea lettuce, and dashi; and an entrée of Wagyu beef cheek, pickled shimeji mushrooms, stem ginger and grilled endive with Teriyaki sauce – are offered both à la carte and in set menus. A choice of appetiser or entrée, and a cocktail, is priced at HK$ 388* per person; a starter, entrée, coffee or tea, and a special umami cocktail “Tzatziki Sour” crafted by Head Mixologist Francois Cavelier, made with a frothy, herbaceous blend of gin, pastis, lemon, Greek yogurt, and macerated cucumber, is priced at HK$ 688* per person.
“Oscar Overture” at The Lobby
Hollywood marks its biggest night of the year on 28 March 2022 (Hong Kong Time), when movie stars converge in Los Angeles for the 94th Academy Awards ceremony. As a prelude to this year’s event – and in recognition of The Peninsula Hong Kong’s numerous movie appearances and celebrity guests over the years – the hotel will celebrate the Oscars in characteristic high style. Every Friday, Saturday and Sunday during the month of March, The Lobby Strings will perform a selection of The Oscars’ best original tunes with each week dedicated to songs from different eras, beckoning music lovers’ return every week for more. Travel back in time to discover the music of the 1970s, 1980s, ‘90’s and aughts, and enjoy tunes from some of these decades’ most popular films, from Fame to Flashdance and from Pretty Woman to Titanic. To accompany the music, Chef Ho has crafted a special set menu featuring a sumptuous Seafood Platter, a choice of grilled Australian beef tenderloin or roasted Scottish salmon fillet, a delicious American cheesecake, and coffee or tea. The set menu is priced at HK$ 888* per person, minimum for two. A special “Griffith Park” cocktail curated by Head Mixologist Francois Cavelier, made with brandy, vermouth, amaro, and a warming touch of chilli liqueur, will also be available at a supplement of HK$188*. The Oscar Overture events take place from 12 noon until 3 pm on applicable days.
Traditionally Elegant Heritage Afternoon Tea
From 1 April to 30 June 2022, Chef Ho will also present his personalised take on the signature Peninsula Afternoon Tea. A cherished tradition at the hotel for nearly a century, the custom of serving tea along with refined sweets and savouries is one that was originally inspired by the tea parties of Victorian-era England. In keeping with its history, Chef Ho has designed a special Heritage Afternoon Tea menu to entice diners with classic preparations including black pudding croquettes with roasted tomatoes; Coronation chicken tartlets with mango chutney; chilled green pea soup with smoked salmon and salmon roe; and roast-beef buns with gherkin, horseradish cream, and spiced mustard. Sweet treats will include sherry trifle cake; banoffee tart with caramelised condensed milk, banana, and whipped cream; Dorset apple cake; and lemon posset cheesecake. Of course, classic Peninsula Afternoon Tea favourites, such as cucumber sandwiches and scones with clotted cream and jam, will also be served.
The Heritage Afternoon Tea is priced at HK$ 448* per person and HK$ 798* for two. Diners wishing to further elevate their experience may also opt to add 30 grams of Kristal Dauricus-Schrenckii caviar for HK$ 888* and/or a flute of Deutz Cuvée Peninsula Brut Champagne for an additional HK$ 180*.
Floral Flavours at Spring Moon
While blossoming flowers enchant the eye in springtime, The Peninsula Hong Kong invites diners to delight their palates with floral flavours from 7 March to 30 April 2022. At Spring Moon, the hotel’s Michelin-starred Cantonese fine-dining restaurant, Chef Lam Yuk Ming will mark the season by introducing imaginative à la carte menu offerings that feature edible flowers, buds, and shoots – such as stewed goose smoked with rose tea leaves, and crispy beef slices sautéed with chilli oil and Osmanthus flowers.
Chef Lam has also collaborated with the restaurant’s Tea Masters to craft a special, eight-course “Floral Flavours” Tea Pairing Menu, which includes deep-fried crab claw with zucchini flowers and minced salted egg yolk (served with magnolia tea), and braised fuzzy melon with fish maw and vegetables (served with Yunnan aged pu er and rosebud tea).
Dishes on the à la carte menu are priced between HK$ 188* to HK$ 1,400*; the set menu is HK$ 1,388* per person
Festive Irish Menus and Tipples
From 14 to 17 March 2022, guests at The Peninsula Hong Kong can mark the occasion with delicious traditional Irish fare and cocktails served at The Lobby.
In celebration of St. Patrick’s Day, Chef de Cuisine Anton Ho has prepared an Irish-inspired set lunch as part of The Lobby’s seasonal menu, including a “Shamrock Salad” of green veggies, smoked salmon, and Irish pub cheese; Colcannon soup with potato, cabbage and bacon; a hearty beef rib and Guinness stew with potatoes and carrots (at a supplement of HK$ 98*); and a leprechaun hat-shaped dessert with strawberry basil confit and vanilla whiskey mousse. The set menu is priced at HK$ 468* per person.
An Irish-influenced Peninsula Classic Afternoon Tea will also be served at The Lobby, featuring savoury bites like black pudding fritters and spinach pancake roll with crab, avocado and caviar alongside classic cucumber sandwiches. Sweet treats will include whiskey cream and almond layer cake, apple cake, banana and chocolate tart, lemon posset cheesecake, and Irish whiskey chocolate bonbons. As always, the traditional and much-loved scones with clotted cream and jam will accompany these special menu offerings. The Irish-inspired Afternoon Tea is priced at HK$ 448* per person and HK$ 798* for two.
A special Irish-inspired cocktail, created by François Cavelier, Head Mixologist of The Peninsula Hong Kong, will also be available to guests at The Lobby. The “Temple Bar,” named for one of Dublin’s liveliest nightlife districts, is a fruity and refreshing blend of Irish whiskey, green Chartreuse, and essences of maraschino cherry, muskmelon, and lime (priced at HK$ 188*). Cavelier has also devised a non-alcoholic drink option, the “O’zu Tonic,” with yuzu, orange and grapefruit juices topped with Mediterranean tonic, garnished with refreshing mint (priced at HK$ 168*).
“A Peninsula Journey” for St. Patrick’s Day
Guests wishing to celebrate St. Patrick’s Day in superlative luxury can opt for “A Peninsula Journey” staycation. Priced at HK$ 3,388*, this package offer includes accommodation in a Deluxe Room, daily Peninsula set breakfast for two at The Lobby, along with a HK$ 668 credit that can be applied towards numerous experiences – including meals at the hotel’s award-winning restaurants (except Imasa, The Peninsula Boutique & Café, catering services), and for the purchase of in-room retail or mini-bar items.
